Chinese Pu Erh (Puer, Pu'er, Pu-Erh) Tea
Though the same source plant is used, the different regular teas are made by using different processes. Green tea is not fermented, Woolong tea is partially fermented, black tea is fully fermented, and Pu-erh tea is post-fermented. This means Pu-erh tea’s processing includes both fermentation and then prolonged storage, or “aging,” under high humidity. Pu-erh tea that is aged for a longer period of time is supposed to taste better.
The good Pu-Erh teas make from old tea tree usually. The oldest tea trees in the world have been found in Yunnan, included are the King of Tea, 1700 years old; the Tea Grandfather, 2700 years old and the Tea Grandmother, 3000 years old.
Pu Erh, Pu-Er or Pu'er is the regular tea which Tibetan and Mongolian drink every day. They believe that Pu Erh tea can help them "digest" meats and may feel sick if not drinking Pu'er tea in a day since they eat a lot of meats as their regular food.

Many Pu-Er tea collectors in Asia treat it as an investment. Old and valuable pieces of Puer cost more than a $1000 per pound. These fermented naturally over many years, called raw or "green" Pu-Er, are more expensive; those fermented artificially by manual processes are called cooked or "black" Pu-Er.
It is a "living" tea teeming with healthy microbes during it's manufacturing and storage process like yogurt or grape wine. Generally speaking, its flavor is the older the better but depending on the storage conditions (humid or dry). It's very hard to find a piece of Pu-Er tea more than 50 years old and kept in good condition in today's market.
Pu-Er loose tea is traditionally compressed into a variety of shapes and sizes for easy storage, included bricks, frisbee discs ("tea cake"), blocks, mushrooms, birds nests or other shape. The most common and famous one is Pu Er Disc. The best comes from the Yunnan province in South-Western China, including Xishuangbanna area, Simao and Pu-Er county. One of the most famous Pu-Er Discs is called Seven-Tea Discs (Heptacodium Cake) or Yuancha, or Qizi Bingcha (Chitsu Pingcha or Chi Tse Beeng Cha) in Chinese. Tea produced in these areas was therefore called "Puer Tea". This combination of environment, longitude, tea tree varieties, and processing techniques does not exist anywhere else in the world. Hence Pu-Erh is a very special and unique style of tea.
There are a lot of medicinal claims associates with the puer tea. Chinese medicine has long revered the healing powers of this tea and used it as a "herb" for a long time.
Best Season to Drink Pu-Er Tea: Fall but you may take it all year round; Pu-Er tea is your best choice if you feel a little uncomfortable in stomach after drinking green tea. Pu-Er tea is very good for your digestive system. You may drink the famous Chinese Chrysanthemum-Puer Tea (just add a little chrysanthemum flower into loose puer tea) all seasons.
How to Select Puer tea: the older the better if NOT moistened and moulded.

How does it work?
Pu-erh tea contains caffeine, although not as much caffeine as other teas. Caffeine works by stimulating the central nervous system (CNS), heart, and muscles. Pu-erh tea also contains antioxidants and other substances that might help protect the heart and blood vessels.
There is interest in using pu-erh tea for lowering cholesterol because, unlike other teas, it contains small amounts of a chemical called lovastatin. Lovastatin is a prescription medicine used for lowering cholesterol. Investigators think that bacteria that sometimes contaminate pu-erh tea may somehow make the lovastatin in the course of their normal life cycle. Animal research suggests that pu-erh tea might lower certain blood fats called triglycerides as well as total and “bad” low-density lipoprotein (LDL) cholesterol. It might also raise “good” high density lipoprotein (HDL) cholesterol.
How to Make best loose Puer tea drink:
You may increase the amount of Antioxidants and decrease caffeine by making tea in correct way! Follow these steps to make a cup of good Pu Er tea:
Select Pu-Er disc or Loose puer tea brewed to make tea rather than regular tea bags and use a fine stainless steel filer or a paper filter sack (No filter bags are needed for our special Puer Loose Tea Blocks). For tea disc (tea cake), it's better to break the disc into very small pieces 2 weeks ago and keep the loose tea in a tea can. Add boiling water to rinse for 30 seconds and throw water away;
Use the best water, if possible, to make best tea, the best water is spring or natural artesian water, but NOT purified water. Use boiling fresh water to brew for 3-5 minutes. Drink light tea all the time. Add some water any time if you find the tea too strong for you.
You may add boiling water again and again for 4-6 times, but add just enough water for one cup each time. Do not add several cups of water once or brewed for a long time before drinking. Never drink tea infused over night.
You may drink puer tea all the time. It never irritate your stomach.
You may add chrysanthemum flower, milk or honey into tea for good taste of Chrysanthemum-Puer Tea, Puer Milk Tea or honey tea.
How to Store the Pu-Erh Tea Discs: The raw Pu-Erh discs may be kept for many years to have best taste from "natural cooked". The longer the better, like red wine. The "cooked" Pu-Erh discs are treated to have better taste and may be drunk directly. It may be still kept for years but not always "the longer the better". Both are kept in room temperature, not in basement, not in refrigerator, and not sealed with plastic bag.
